Easy Recipes For a Weekend Brunch at Home

There’s no doubt that Melbournians love a weekend morning brunch. The crispy morning air, activewear and overpriced smashed avo’s have us queuing out the front of some of the best cafes in Melbourne. With the current restrictions in place, unfortunately brunch with your partner or friends have ceased for the time being. As we wait patiently for this time to pass, there’s no better time than now to get creative in the kitchen and bring that Melbourne brunch home without the additional $3 charge for an extra poached egg.

Whether its French toast, Smashed Avo or some simple Poachies on sourdough, all can be easily made at home with basic utensils and ingredients. All you will need to do is get creative with your plating up skills and there you have it a Melbourne style brunch done at home. 

Now everyone has their own favourite recipes and things they like to add to their morning breakfast or brunch, so during this post I’ll be sharing my favourite recipes and meals that I’m a sucker for when it comes to breakfast or brunch.

Smashed Avocado with Boiled/ Poached Eggs Served with Smoked Salmon, Dill and Zesty Lemon

Found on almost every café menu in Melbourne, the popular smashed avocado is always a go to option for me.  Making this at home is incredibly easy and if you’re trying to impress your partner with breakfast in bed, this is a fool proof option. I think boiled eggs are really under rated and I enjoy them just as much as I do poached eggs, but you can choose whichever you prefer for this recipe.  Homemade Nutty Granola Served with Yoghurt and Fresh Berries

If you haven’t made your own granola now is a great time to do so. A lot of the granolas available at supermarkets are packed with sugars and preservatives so its good to be mindful and check the sugar content of these products before you purchase them. This homemade recipe is a healthy, comforting and delicious alternative to store-bought granola and can be made from simple ingredients you might have in your pantry. Here’s my Nutty granola recipe thats packed with protein, fibre and good sources of healthy fats. 

 

 Simple French Toast

As a young child I remember waking up to the smell of my mother making us French toast on the weekends. I would hurry down and quickly set the table so we could all eat whilst it was warm. Whether its sweet or savoury, French toast will always be one of my favourite things to eat and have for brunch. I don’t usually order it out because now a days a serving of French toast comes with ice-cream, cotton candy and a whole heap of un-necessary toppings. For me I like simple and traditional and usually use toppings such as honey, fresh fruits, maple syrup or some sour lite cream for a savoury option. Here’s my simple French Toast Recipe;

 

Quick Chilli Scrambled Eggs 

This is a seriously quick and nutritious recipe you can try even if you're short of time and need something with a bit of a kick to get you going in the morning. You can serve this protein packed option with toast or veggies such as spinach, tomato or grilled mushrooms. I enjoy mine with some grilled tomato & chorizo sausage.
